Start with straight, dry walnut and hard maple. Glue equal-thickness strips into a panel, flatten it, crosscut into blocks, rotate them end-grain up and complete the second glue-up on a dead-flat surface. Avoid a planer once end grain is exposed; use a router sled, drum sander or careful sanding instead. Round the edges, cut shallow finger grips and saturate the board with food-safe mineral oil, followed by board wax. Never use vegetable cooking oil, which can turn rancid, and let the board dry upright after washing.
